How Colavito Oil Is Produced
Harvesting
Olives hand-picked or harvested with mechanical aids between November and January, at 20% veraison to maximize polyphenols.
Processing within 24 hours
After harvesting, the olives are quickly transferred to the mill and milled within 24 hours, preserving their freshness and quality.
Cold pressing
Processing takes place through a cold extraction process, designed to keep the aromatic heritage of the fruit intact. The temperature never exceeds 27°C to preserve aromas and antioxidants.
Bottling
Gentle filtration and bottling in dark glass or tin, away from light to preserve all properties.
